Delicious Leek and Potato Soup
Leek and Potato Soup is a thick and creamy classic soup that starts with onions in which leeks are slowly sautéed to bring out the sweet flavour. YUUUM
It’s simple to make, cosy and comforting yet also luxurious and elegant. I love how this Leek Soup can be Couch Food OR an elegant starter for a (virtual) dinner party. Good food is definitely a universal language!
What you’ll need for this soup!
Leeks – essential for a LEEK soup!!
Potatoes – use starchy or all rounders, they fall apart when simmered which means less blending for creamy soup results!
Onions – chopped onions are essential for this delicious meal! They bring out the flavours especially when sautéed with leek.
Spices- Cumin, black pepper, pink salt and a bit of chili flakes. I like to use simple spices for this recipe as the taste of the veggies is plentiful already!
Ingredients
2 tbsp extra virgin olive oil
2 garlic cloves , large, finely minced
3 leeks , sliced thinly
1 large potato, diced
1 tsp salt
1/2 tsp black pepper
1 tsp cumin
Sprinkle chili flakes
Water
Instructions
Oil a large pot over medium heat. Add onion and leek and sauté for 7 minutes until soft and sweet. Add garlic at the end.
Add potatoes and water to cover the veggies and turn heat up and bring to simmer, then place lid on and lower heat so it's simmering gently.
Simmer for 25 minutes or until potato is very soft and almost falling apart. Turn the stove off and puree with a stick blender until JUST smooth.
Add salt and pepper, and your spices.
Serve, drizzled with olive oil or sprinkle with chives
