Gluten-Free Vegan Lemon and Date Scones- Ready in 30 minutes… YUUUM!

Lemon lovers rejoice! These gluten-free vegan scones are bursting with bright lemon flavor!

Perfect for a brunch or for desert, these scones are light and have a beautiful crumb!

Serves: 6 scones

Prep time: 10 min

Bake time: 20 min

Ingredients:

Dry Ingredients:

- 1 Cup of rice flour

- 1 Cup of tapioca flour

- ½ Cup of buckwheat flour

- 2 Tablespoons of psyllium husk

- 1 Tablespoons of baking power

- 3 Tablespoons of organic coconut sugar

- Zest of 3 lemons

- ½ cup of chopped dates

- Pinch of salt

Liquid Ingredients:

- Juice of 3 lemons

- 3 Tablespoons of coconut oil

- ½ cup almond milk (adjust if needed)

Direction:

- Preheat the oven 180 C

- In a large bowl, mix all dry ingredients

- Add liquid ingredients and mix thoroughly to create a dough

- With a serving spoon scoop the dough into round shaped scones and place them on a baking sheet.

- Bake for 15-20 minutes or until the scones are lightly golden.
